Vegan Sandwich

Vegan Sandwich: spinach, lettuce, sweet onion, homemade mayo and mustard, sunflower seed cheese on homemade rye bread

My daughter and I are up early each morning. I’m automatically awake by 4:30. Aiyana is usually up by 5:30. Today we had some shopping to do. I wanted to stop by a local farmer, and we had to do some errands at the local department store. I said, I’m craving something green and lot’s of it! My daughter suggested Subway. Occasionally we stop by there, but I told her, “Let’s make our own version of veggie subs at home ok Pook? ” Ok, mommy!” She said.

Vegetables

Freshly grated carrots, romaine lettuce, green leafy lettuce, baby spinach, and sweet onion

The meal cost under a $1.00 to make. Surprised? You shouldn’t be. :-) Although the sandwich is simple to prepare it doesn’t hold back on flavor.  It’s loaded with fresh

Daughter with Baby Alive

Aiyana with Baby Alive

I guess this picture says it all, right? Baby Alive arrived yesterday by UPS I took this picture before I opened the box for Aiyana. I look at her picture and at times I cannot believe how much she is grown. She is tall for her age and is usually taller or at the same height as children a year older than herself at times it is hard to believe that she is just four years old.

She was patient and let me take my time to open it. Guess what? My daughter loves Baby Alive and thankfully my furbabies and fuzzbutt ferrets are now receiving a much needed break from Aiyana’s nurturing. She slept with it last evening.

Conversation last week on the way the store…

Aiyana: Mommy
Me: Yes?
Aiyana: I think I want to give Baby Alive to some girl that really needs it
Me: (Smiling) That’s very nice of you but you can keep it we’ll pick up a few more Baby Alive’s for children this Christmas, ok?
Aiyana: (Smiling) Yeah! Ok!
