Roasted Garlic & Ginger Grilled Vegetables

My itty bitty grill


All work and no play would make me a very boring, not to mention irritated vegan momma. This afternoon my daughter and I had a cookout. We lingered outside a long time soaking up the sun as I roasted the vegetables on our little portable grill? I don’t see the need in buying some big monstrosity that I rarely use.

Vegetables: Zucchini, garlic, and yellow onion

What was on the grill? Marinated zucchini, pears, potatoes, garlic, ginger, and onion it actually turned out very well. My daughter loves nama shoyu so I marinated the vegetables in that. The pears didn’t come until after the dish was made. Remember the pears I picked yesterday? Well two of them made it into this dish.

My daughter asked for Earth Balance (vegan butter without the cholesterol) and from what I remember of “regular butter” it tastes a lot like it. I rarely eat Earth Balance but my daughter occasionally likes it on toast or a baked potato.

This is what it looked after I took it off the grill. My daughter sampled a bite and said it was yummy. I’ll be adding freshly picked cherry tomatoes and collards from the garden. We need to add color you know. I won’t cook them so this will be a raw and cooked dish. I’ll post the recipe on The Raw & The Cooked.
