I’m posting my Photo Hunters a day early.  I’ll be away most of the weekend. I have a lot of family coming into town. As I sat here thinking what could I possibly post that was creative I realized the photos were loaded on my camera? I made “seafood patties” (what a friend calls them) last evening.

Aiyana, my four year old daughter, arranged the plate. Isn’t that creative? The creativity doesn’t stop there. The patties made from zucchini.

Nutrition is very important to me but equally important is how something tastes. If something isn’t flavorful but just happens to be nutritious I can tell you now that my daughter won’t eat it, lol.

These patties received the thumbs up from my omni buddy who has thankfully started adding more vegetables and fruit into his daily intake. He told me these patties remind him of seafood.

The zucchini patties don’t have anything from the sea in them but I think he’s reminded of it because of some of the seasonings I used such as old bay seasoning and dry mustard.  You’ll find some of the same seasonings in crab cakes.

    Never thought of that as a burger ingredient (but they are courgettes to us brits!) My other half is vegan so they will have to be tried! Happy weekend

    Hi—Opal: Thanks for stopping by my blog. I have to tell you i’ll eat just about anything with tomatoes in it, love em. Those zucchini burgers are yummy looking, i wish more restaurants would do food like this, gosh when will they wake up and smell the meatless burgers cookin. lol.

    As I looked at your photos I was suddenly reminded of the same thing that the Italians make: zucchini, eggs, spices fried in a patty. I haven’t thought of them in so long; I’ll have to dig out the recipe!
