Zucchini Burger
I’m posting my Photo Hunters a day early. I’ll be away most of the weekend. I have a lot of family coming into town. As I sat here thinking what could I possibly post that was creative I realized the photos were loaded on my camera? I made “seafood patties” (what a friend calls them) last evening.
Aiyana, my four year old daughter, arranged the plate. Isn’t that creative? The creativity doesn’t stop there. The patties made from zucchini.

Zucchini Burgers
Nutrition is very important to me but equally important is how something tastes. If something isn’t flavorful but just happens to be nutritious I can tell you now that my daughter won’t eat it, lol.
These patties received the thumbs up from my omni buddy who has thankfully started adding more vegetables and fruit into his daily intake. He told me these patties remind him of seafood.
The zucchini patties don’t have anything from the sea in them but I think he’s reminded of it because of some of the seasonings I used such as old bay seasoning and dry mustard. You’ll find some of the same seasonings in crab cakes.
Do you want the recipe? You can find the zucchini burger recipe on my website The Raw & The Cooked. Enjoy!
If your vegetarian/vegan or just want a change from a crab cake or burger you might want to give these a try. They are moist and delicious and very healthy.

As I looked at your photos I was suddenly reminded of the same thing that the Italians make: zucchini, eggs, spices fried in a patty. I haven’t thought of them in so long; I’ll have to dig out the recipe!
on July 28th, 2007 at 10:26 am

I love this blog! I’m a vegetarian and this stuff is great! I got onto your blog from a ferret forum; Loving Ferrets. I am sort of obsessed w/ ferrets even though I don’t have one, and I’ve wanted one ever since a special on TV.

That looks fabulous and now you are also giving me ideas to put more veggies daily intake as well.
on July 28th, 2007 at 7:19 pm
Oooh, you are making me hungry. I will have to try that recipe. I am a vegetarian, but with food like that, I could possibly go vegan!
