Ok so I didn’t make the veggie burgers

I started to, but I made the mistake of letting Aiyana sample the freshly pureed batter. She loved it so much that I didn’t have a chance to form it into patties. It does make an excellent dip so she had that as a “side dish.” What beans did I use? Black beans and black eyed peas.
I have much leftover batter so I’ll use that to stuff tomatoes and red & yellow bell peppers. That sure will be colorful. I bet it would be delicious in an hollowed out eggplant then put into the oven to bake. If I want a creamy topping I would make a cashew nut sauce. Or you could make burritos with this filling the choices, for me, are seemingly endless.
What was her main dish? Grated carrots, raisins, & romaine lettuce. I bought five pounds of organic carrots last week. They are incredibly sweet and very fresh. I can always tell the difference between fresh carrots and carrots that have been sitting for a long time.
Yes Aiyana had a side of the rosemary garlic fries that she loves so much. The fries are baked. I usually coat them with raw coconut oil and toss with seasonings. Today I added fresh ground garlic, rosemary, basil, and a tiny amount of celtic sea salt. Aiyana loved them.
I’ll post pictures and upload them to The Raw & The Cooked later today, but right now my daughter is getting ready to take a nap. That is after she finishes her lesson on StarFall. She reminds me so much of myself at her age she loves to learn, and she does best when I follow her lead.

WOW! Everything sounds great! I don’t do all that much with Black Eyed Peas…they are good, just forgot about them a lot. Sounds great tho! I would love to hear more of your ideas for stuffing tomatoes, peppers, and mushrooms! I want to start doing more of that stuff!
Is StarFall like that LeapFrog type thing or is it something totally different? Just curious.

I never much cared for black eyed peas myself. Now purple hull peas I like much better. Black eyed peas I always had to mix with sour kraut to be able to stand them. :-)

Yeah it’s all good. I think I’ll stuff the peppers tomorrow. My “bean dip” is currently marinating in the refrigerator.

A friend of mine didn’t like them too much either. He said they looked like roaches. Nice!
We have sweet peas in the garden ate some fresh off the vine this morning. They were delicious!

It took me long enough eh? Actually I downloaded the ones that you mentioned quite a while ago but they’re not playing nice with some of my plugins so I’ve ditched them for now.

Black eyed peas reminds me of my childhood. Momma fixed them all the time with cornbread. She ate hers with mayo in it. I can’t even stand the smell of them now. Eww.

We eat black-eyed peas with vinegar sprinkled on them. I love them but the rest of my family gags whenever I mention them!

I never had them that way. Vinegar aids in digestion an I know some beans are hard to digest. That gives me an idea.

I made my first batch of veggie burgers yesterday.
Just experimenting.
1 16ounce can Aldi’s Mexican chili beans (No meat listed on can) smashed to smithereens
1 cup cooked rice
1 egg
1tsp Italian seasoning
1 tsp Crushed red pepper
some black pepper
1/4 Valdalia onion diced
2 Tbsp flour.
Chill, form into patties. fry in vegetable oil.
Pretty tasty if I do say so myself.
Any one got non soy vegeburger recipes let me know.
