The Raw

Check out those colors? They’re beautiful aren’t they? I love seeing color in my food. It sure makes me happy. Did you know brightly colored fruits and vegetables are loaded with nutrients? I made this dish for myself. What’s in it? Finely chopped cabbage, coarsely chopped broccoli & cauliflower, diced apples, tomatoes, and yellow onion.

I eat it as is, or I’ll use big greens to hold the contents. The greens make excellent “sandwich wrappers”. Occasionally I’ll toss it into my food processor and process until smooth. I then use it as a filling to stuff into tomato, pepper, or mushrooms. Occasionally I add spices or edible flowers. Delicious!

The Cooked

It’s the same ingredients but it’s been lightly sauteed. As you can see the bright colors are still intact. The longer you cook your vegetables the more nutrients you lose. Not good! I think I sauteed this for about five minutes. My daughter loved it. It tastes even better after it has marinated.

The next time I make this I’ll add grated carrots and sweet yellow bell peppers.

    I will be doing an entry soon but wanted to visit you first. Glad I did. I have always been Leary about adding fruit like apples to veggies before no real reason just didn’t know how to mix them so they would taste good together! I love the idea of blending until smooth and using it as a “stuffing” for peppers/tomatoes/mushrooms! i will have to try that! thanks, as always for the ideas!

    I toss all sorts of fruit into the mix like pineapple, mangoes, raisins, etc.

    My daughter loves the “filling” occasionally I add spices to it. With or without spices it’s delicious.

    I am not a vegetarian but I do enjoy most vegetables and truly need to improve my eating and be more consistent. I will be watching your recipes. I am glad you share them.

    This looks great! What a good idea to use them as sandwich stuffing. I do veggie pitas almost every day - totally hooked on them. I think this would be good to keep a bowl of in the fridge - raw or cooked!

    At times it can be tough to make improvments on various aspects of our life. Taking baby steps might help. I tend to do that with certain things.

    Veggie pitas are delicious, flavorful, and so filling. Later this year I’ll be adding video podcast to my website. Cooking/uncooking will definitely have a primary role.

    Yes, baby steps and that is why I “waaaaaaaaaaaaaaaaaa…” the whole time. Joking aside, this is actually important to me to make some significant changes here very soon.
