On the Sunny Side of the Day, Part II

In the summer issue, I wrote about the benefits of eating or juicing greens for breakfast. In this issue, I explore how to get the most energy and nutrients out of every meal.

Digestion begins in the brain. Some say digestion begins in the
mouth, but truly it begins in the brain. Your eyes and your nose get your body and mind in the mood for food, and just the thought of food gets the digestive juices flowing.

Why Chew? When food enters the mouth, the first step in food breakdown begins. Chewing is the mechanical breaking open of plant cells. Chewing is an important factor in the body’s ability to utilize any nutrients. Your teeth break the bread down into smaller particles, increasing the surface area through which digestive enzymes have easier access to the contents inside. Link

The Raw and the Cooked

Charlie Trotter, one of the top chefs in the country, is most definitely not a vegetarian. “I eat fish and meat every day,” he declares. And yet, patrons at his namesake Chicago eatery can skip the meat and seafood on offer and get a — gasp — vegan, all-raw degustation menu, unquestionably a first in this upper echelon of fine dining.

Why this bold move? To Trotter, it was a natural progression. “I had offered a vegetable tasting menu for years,” he says. “While I love cooking seafood and meat, I’ve always found vegetables to be the most interesting things on the plate. Their depth of flavor and texture is incomparable — you can do anything with a vegetable.” Link

Tests, Tests

It’s been a wonderful day. Aiyana is still sleeping.

This morning I had an appointment at the house. I’ve upped my life insurance to 500k. If anything should happen to me I want to insure Aiyana will be taken care of. In my will it states that no one can touch the money. She will be entitled to it after the age of 18. I do have separate investment set up for the guardian.

I received a call earlier this week. A nurse wanted to come out to the house to take some tests since I knew I would be off today. I told her to stop by in the morning. She arrived a little after 9:00. She took urine sample, blood pressure, pulse, and to drew blood. I liked her she was very friendly. Everything was great. My blood pressure was 101/60, My pulse rate was 58, I took gave the urine specimen. I was even lost weight, about 8 pounds. I was not trying to lose weight. However from my readings on raw foods I was expecting this to happen. When I look at myself I cannot tell that I lost weight but I noticed a few pairs of pants that were tight in the legs aren’t anymore. My already flat stomach is a little flatter.
