Berry Crepes

Raw Blueberry Crepes

This evening I made raw blueberry crepes. They were delicious but a little too sweet for me. My daughter loves them.

Aiyana kept trying to eat the fruit leather aka crepes before I used them.

I got the idea from Alissa Cohen’s book, Living on Live Foods. I followed the crepe recipe but changed the rest of the ingredients. This is a very rich dessert. This recipe is a keeper and I will make it for family/friends. I’ll serve it for family this coming holiday.

The fruit leather took the longest to make but I didn’t have to do anything. I just stuck it in the dehydrator overnight and checked it the next morning. The actual dessert preparation I was finishedin about seven minutes. I’ve included the recipes below.

My daughter loves ice cream. I think I will make this later this evening. It sounds good. I cannot wait to see how it turns out.

Ingredients
3 frozen bananas
5 strawberries
Freshly ground raw cashews (about 10 pieces)
1 tbsp agave nectar (optional)

Directions
Blend in a food processor until smooth.

Decisions, Decisions…

Aiyana and I checked the banana chips and fruit leathers this morning. They both were dehydrating nicely. In fact Aiyana ate several of the banana chips and tore off a piece of the fruit leather. I will have to take a picture of that.

I have four ears of corn left I’m thinking of making raw tortilla’s or raw corn chips. I’ll stick them in my dehydrator overnight. If I do go with tortilla’s I would like to make some type of “Taco” or perhaps a burrito? If I go that route what should I fill it with? I’m thinking marinated tomatoes, onions, mushrooms, and perhaps sprouts?

My little angel

Aiyana asked me last evening, “What are you making mommy?” Are you making snacks for me?” Yes, sweet pea I’m making banana & mango rollups. She said, “Oh you are making me yummy treats may I have some now?” I gave her a bowl of blended banana and mango “yogurt”. She liked it so much she ate two bowls.

I smoothed the banana and mango blend onto a teflex covered dehydrator tray. I still had for overly rip bananas so I chopped them up and added to another tray. Aiyana loves dehydrated banana chips but she prefers eating fresh fruit and she loves her smoothies.

A few days ago Aiyana told me, “I was crying earlier today.” I said, “Yes I remember. Why were you crying?” She said, “Because I didn’t get my way.”

At least she’s honest. ;-)

Congratulations!

A few minutes ago I read an email from my coworker. I talk about nutrition at work and she does read my blog. She is in her late 60’s, she was retired and came back to work (part-time) to have soemthing to do. Guess what? She is making the transition to all raw foods. I thought that was wonderful news! Over the past few months I have noticed a radical change in her eating habits. She transitioned from eating poultry and seafood to seafood only. During this time she eliminated her occasional indulgence, chips, from her diet. She also transitioned to sprouted breads instead of regular bread. She also lost weight. I think over eighteen pounds! She bought a juicer and increased her consumption of fresh fruit and vegetables. It is refreshing, to me, to see someone not only talk about making positive changes in their eating habits but actually putting those desires into practice.
