Retirement Goals

Do you want to find out how much you need to invest to reach your retirement goals? You can use this retirement calculator. I don’t plan to be working until I’m 65. I’m looking at retiring in my early 50’s.

Of course I will still be “working” but the work I will be doing is volunteer work, perhaps even sit on a few boards I will be pursuing my own endeavors. Although I cannot predict the future I do believe I will still be working with children. I encounter many that seem defeated. I think at times people forget that children weren’t born the way they are circumstances is a huge factor. How can their outlook on life be turned around? I think being a great role model, keeping your word, taking time to just be there.

It’s been three months!

At the non profit organization where I work there is a probationary period of three months before your benefits kick in. My benefits officially start today. I have the majority of my retirement funds handled by Prudential but I’m looking to roll that over. At my company they use American Funds. I have read many good things about AF but still need to do more research. I meet with a representative this Friday. I will definitely have my questions ready. I have investments at T. Rowe Price as well. Decisions, decisions, decisions *sighs*.

Spring rolls to the resuce

Vegan Spring Rolls

It was a little after 9:00 p.m. last evening when Aiyana spotted the spring rolls sheets in the refrigerator The instant she spied them she started chanting, “Please may I have some spring rolls? Please may I have some spring rolls!” May I have some spring rolls?” I usually add beans to my spring rolls but I had not prepared any so I quickly pureed broccoli, finely chopped yellow onion & mushrooms, ground up cumin, and added a tsp of Bragg’s liquid amino acid to the blend. I prepared five spring rolls in the skillet. I used coconut oil. She said they were delicious. Well guess what? I did not receive zip! Nada! I rarely eat that late at night anyway. I took pictures and will post them later this evening. *Sighs* at least she said please! ;-)

Tonight I think I will make black bean spring rolls.
