Hanging out with Aiyana

I took a comp day today. I will spend most of the day hanging with Aiyana and trying to think of what I want to make for our meals.
I’m thinking of getting our food shopping out of the way so my entire weekend is free. Today I awoke at 3:30 and Aiyana awakened around 5:00.

I’m excited since I get to get in a great workout today. Those are always nice. I workout before I go to work in the morning. Bally’sopens at 5:30.

I made this yesterday morning.

My daughter loves sauce

What’s in the sauce?
1.5 cups of rooibos tea
3 tbsp. freshly ground raw sunflower seeds
1. tsp Braggs liquid amino acids
2 tbsp nutritional yeast
1 tsp freshly ground cumin

I rarely use flour. I think people use entirely too much of in food preparation, but that is just my personal opinion.

I poured the sauce over the vegetables after about 5 minutes of cooking on low heat.
The results the sauce was excellent and the vegetables were delicious.

I made a pot of lentils Tuesday morning. I brought them to work as well. I store my food in the small pyrex glass containers. They hold two cups of food. I shared my lunch with two coworkers yesterday. They really loved the food of course there were no leftovers.

fresh vegetables

I made this yesterday. The dish consisted of mustard greens, kale, collards, radishes, acorn squash, parsley, and yellow onion. I sautéed the onions in rooibos tea and added the squash. Once they had cooked for about three minutes I added the rest of the ingredients. The total cooking time was about ten minutes. Oh by the way one the dish was finished I shredded one nori wrap and divided between two plates. I mixed it in with the ingredients. I then liberally sprinkled sunflower seeds over the dish. The squash was very sweet and paired well with the parsley. The fresh vegetables added their own flavor to the meal and it smelled fabulous. I loved it. My daughter ate a total of three bowls. There was only two cups leftover. I had planned on taking it to work but since my daughter loved it so much I am setting it aside for her lunch.

I prepared this early today. The broth came from the bright red tomaoes I chopped in the skillet, and the ’sausage’ that was loaded with flavor and many lovely spices. I did not need to add anything else to this simple dish. Oh by the way the greens were fresh and delicious! I have a little hothouse in the backyard so I can get fresh greens year round.

I made the ’sausage links’ about a month ago it came to about 5 pounds. I rolled up the sausage and stored in a glass container in my deep freezer. I forgot them until yesterday. It does not contain any soy products. If I want it I make my own. We don’t eat too much soy in this house. However it does contain lots of vegetables. I don’t buy veggie burgers/sausage. Occasionally I have checked out some of the brands when I have been in the store most are highly processed and not that healthy.

I went to The 13th Floor last evening with a former coworker. I have not seen him since I left in October. I was actually going to cancel but I decided to hang out for a few hours with him. I’m glad I did. It was nice to see him again. A lot has changed since I left there. There are many that have left. He urged me to keep my options open. “Who knows you might want to come back to us within a few years!” I really don’t see that happening I just smiled, nodded, and said, “Perhaps you’re right.” ;-)

Our organization has one more day of certification training, today; we won’t have any more until the fall. I’ll be so glad when my workday is over. I’m off Monday. I plan to get my errands completed tomorrow.
