Success with Chili

Simmering Chili
I think this is the best Chili I have made! Ok, I don’t think I know it is! I am sure I will top this. I love experimenting. I really enjoyed eating it and so did my daughter. I cannot wait to make the raw chili! I don’t think it is hot then again I love hot. However you can cut down on the cayenne.

I added two types of peppers habañero and jalapeño (one of each.) I added Agave nectar for a little sweetness. You could use maple syrup, molasses, raw cane sugar, or fruit juice. I would stay away from white sugar however if you don’t have a variety of choices then use it.

The beans I used were black turtle beans. They were soaked overnight although 8 hours is enough. I prefer dried beans. I dislike canned beans however if you don’t want to fool with the dried beans use the canned or beans in the jar.

Chili

For some reason Isil’s post made me think of chili. I quickly put some black beans and soaked them. I will be making chili today. The more I thought about it yesterday the more I became curious about raw chili. Hmm, I wonder what that will taste like? I will find out later this week. I will post pictures of today’s chili later.

I was going to make Vegan chocolate chip cookies but I realized I don’t have chocolate chips. It’s not like I keep that around the house. My father will be over later this week and loves the chocolate chips. He is always amazed that they don’t taste any different than the ones that include animal products. It looks like we will be making a trip to the store either later today or sometime tomorrow, haruumph! ;-)

Raw Eggplant Pizza

I made these Saturday. What is the sauce made of?
Mashed avocado
Pureed tomato
Garlic
Black Olives
Sweet basil
Sweet Onion

I used grated carrot for the topping. They were sweet and oh so delicious. I would have added mushrooms and red cabbage if I had any. I would have added olives as a topping if I had any left. I stuck these in the dehydrator for 4 hours and pulled them out. My daughter loved them.

Eggplant Chips revisited

A few days ago I made eggplant chips.

Ingredients:
Freshly ground flax seeds
- (it’s a great egg replacer & it’s a good source of omega 3’s,
Freshly ground cumin
Nutritional yeast
Dr. Schulze’s superfoods
Freshly ground cashews

I dipped the marinated eggplant pieces in herbal (rooibos) tea then coated them with the mixture. In a few days I will make more this time they will be plain eggplant chips.

celery juice

I made this last evening. This juice was made of celery, kale, cayenne (habenero) pepper, ginger, and garlic.
Celery is excellent for calming the nerves, and is also a mild laxative. Kale is a fabulous source of iron and calcium. It has more than spinach.

I rarely eat after 6:00. If I do have something it is in liquid form. Aiyana and I had this snack around 7:00 yesterday. It was simple and consisted of strawberries and grapes. They were very sweet and delicious! :-)
