Peel and Pith ~ Citrus

Do you throw away the citrus peel and its pith (white part)? Have you ever thought about eating it? Eeeww! It’s bitter why on earth would I do that? Are you mad! Take a look at this article A Critical Look at the Flavonoids. One way I incorporate both into my food intake is by juicing the entire organic citrus fruit. If you don’t have a juicer try adding a few parts of the pith to a fruit salad, juice, or perhaps you could add it to a sandwich? Hey, it was a thought! ;-)
I am currently sipping on (tangerine, lemon, and lime with cayenne (jalapeno) pepper tossed in for zing. The peel and the pith are extremely high in flavonoids and are good for you.
