Success with the baked Spring Rolls

The spring rolls were a huge hit with my daughter. I added tomato sauce to the blend. The first batch was not doing it for me and got tossed. My father who was by to eat thought I was mad and said they were fine, however I tend to be a perfectionist when it comes to preparing meals. I was not liking them. Aiyana is currently working on her third spring role and demanding more, “Want some more spring rolls, PLEEEAAASSEEE!” Sighs Well at least she said please and when did I turn into her personal slave. Oh yeah since pregnancy ;-) I still have not made a sauce. The spring rolls are flavorful and bursting with juice thanks to the added tomatoes I really don’t need to make a sauce but I will still make a one since my daughter loves dunking food into them.

I need to charge the digital camera’s batteries so I can take and post pictures pictures.

Baked Spring Rolls

I put the spring rolls in the oven a few mintues ago. The filling consists of yellow squash, zuchini, black beans, button mushrooms, garlic, ginger, sage, and celtic sea salt. I will post pictures. Aiyana already has her oven mitt on. I guess she thinks she will be helping me take the rolls out of the oven, silly girl! I am still trying to decide what type of sauce I want to use.

Cooking Break

There are times, although rare, where I really don’t feel like cooking. I felt this way ever since returning from South Carolina this past Sunday. Thankfully I have not had to do too much cooking since I made so many beans in advance.
