I want you to do something!

In Defense of Animals has created World Go Vegan Days
which runs from October 30, 2005 - November 1, 2005.

It might seem easier to sit back and do nothing however it makes it harder for those out there who are doing something about it. They have to work even harder. You really think that one person can’t make a difference? Need I remind you of Wangari Maathai? Through the Greenbelt Movement she has assisted women in planting more than 30 million trees on their farms and on schools and church compounds.
One person can make a difference and every person should try. If you automatically assume you cannot make a difference you are having a defeatist attitude. Can’t you see that is what industries such as these want you to think? They are hoping many people believe they cannot make a difference. How can you justify giving up if you have not made an honest effort?

Grilled Vegetable ~ Snack

I made Aiyana and myself a light snack of grilled vegetables a few minutes ago. The tomato came from the garden and was exploding with flavor.

Today I will be making grilled eggplant and other vegetables later today. I had planned on making them yesterday but I could not locate my Foreman Grill.

I don’t use my grill often but I really like this grill! I occasionally use it to make vegetable patties. I mainly use it to grill vegetables.Yesterday, I bought my two eggplants from Huber’s farm. I grew some in the garden but we have eaten the ones planted in the garden. They sold the eggplants for $1.00 apiece. They were extremely large. One will be enough for a few meals.

I will post pictures once the meal has been completed.

Marinated Tofu

I made these Friday. I had marinated the tofu this past Wednesday. I was planning to use it in a dish later that day but I forgot about it. Aiyana and I ate fresh vegetables instead. The sauce I used to marinate the tofu was made of: pureed tomatoes, Braggs amino acids, freshly ground peppercorn, and garlic. I coated them in one tablespoon of freshly ground flax seed and 1 cup of herbal tea. I then dipped them in nutritional yeast/superfoods. They turned on the outside. When you took a bite of the tofu the juices exploded in your mouth. It was very delicious. I had planned on serving the tofu cubes on top of fresh vegetables but Aiyana was having none of that. These tofu cubes did a fast disappearing at. The prize was a one-way ticket to her stomach. :-)

Aiyana loves a wide variety of whole foods and for that I am happy. She eats what I eat and turns her nose at most processed food. I imagine she feels like her mommy. They don’t compare to whole foods. We occasionally eat tofu and homemade ice cream but for the most part the meals I prepare are as close to their natural source as possible.
