Black Beans and Rice
I made this dish a few hours ago. I had prepared a few pounds of black beans last week. I took one of the small bowls out of the freezer to make this meal. This dish consisted of:
Black beans, tomatoes, ginger, garlic, curry, whole cumin, and freshly ground cumin. I had soaked brown rice overnight and prepared it in an herbal tea to accompany this meal. The brown rice was fragrant and delicious. My daughter declared it ‘yummy’. She and Lalita did the magical disappearing act with their food.
I plan to roll a few in Nori wraps. My daughter will be able to eat it like a burrito. :-)
