Vegan sweet potato pie

I am not a big sweet eater. The sweets I mainly eat are fruits. I will be entertaining a few guests in the upcoming weeks and quite a few love their sweets. I had a fabulous crop of sweet potatoes this season and decided to make a sweet potato pie this past Sunday. The sweet potato pie consisted of sweet potatoes, freshly ground flax seed, cinnamon, nutmeg, vanilla beans, and dried peach herbal tea, and maple syrup. It was fabulous and Aiyana pronounced it ‘yummy’. That is her favorite word when it comes to foods she likes.

Vegan Cuisine w/peanut sauce

I made this dish last evening. I had prepared a few pounds of garbanzo beans this past weekend. What I did not use on Saturday I divided into small containers, enough for one meal, and stored in the freezer.

I was not sure how I wanted to prepare the garbanzo beans. However this is the end result. The dish consists of garbanzo beans, Swiss chard and tomatoes, which came from my garden. I grated about 4″ of ginger and added to the dish. My daughter likes sauces so I added about 1/2 herbal tea and added 1 tablespoon of peanut butter. I usually use freshly ground peanuts or cashews but I did not have any available.

Bart the Bear

I wondered how old Bart the Bear was. I found the Shadow of the Bear website with the above picture

Bart the Bear died comfortably in his Utah home on May 10, 2000 surrounded by his Seus family and friends. Bart was just over 23 years old and has touched many of our lives by his presence in dozens of feature films, documentaries, commercials and television shows. Bart was a Kodiak brown bear adopted by Doug and Lynne Seus in 1977 weighing just 5 pounds. He had been born in a zoo to orphaned parents. Twenty three years later, Bart weighed in at approximately 1500 pounds and stood some 9.5 feet tall. Our hearts go out to the Seus family and to Bart, you will be missed, yet not forgotten.
